how is your dipping chocolate so thin? mine is thick every time?

I am pretty new in this country and I do not have a recipe for christmas cookies and I do love them. I would really apreciate if you could help me get a good recipe. Thank you!
To make the temper you can either add 1/3 of the un-melted chocolate inside the pan, or take out 1/3 of the chocolate spread it on a cool surface (like a marble or cold smooth stone tablet) after 3-5 min cooling it return it to the pan. The tempering of the chocolate is done.
Well, thermometers are fine, but if you don’t want to bother buying one there is a more practical way to determine the temperature to make the temper of the chocolate… Just pass a bit of the melted chocolate with a spatula on on your lips – be sure that it’s no too hot first, touching with your fingers… If you feel a cold sensation it’s ok – it’s bellow 37 degrees Celsius (sorry I use decimal scaling system)
